Roast Vegetable omelette

If you’ve made our Roast Vegetables recipe to keep you covered on your nutritious vegetable intake over the week, this is the perfect way to bring those veggies into your morning routine.

INGREDIENTS:

  • One generous handful of roast vegetables
  • 2 organic and free range eggs
  • A splash of milk or water
  • Olive or coconut oil to cook

METHOD:

  1. Heat the oil in a pan.
  2. Warm a generous handful of roast vegetables on the stove top.
  3. Whisk 2 organic and free range eggs with a splash of water or milk.
  4. Pour the eggs over the vegetables and cook on high heat.
  5. Cook through and enjoy.
