Rocking Fried Rice

INGREDIENTS:

  • 1 TBS coconut oil
  • 2 rashers bacon, finely diced
  • 2 shallots, finely diced
  • 1/3 cup peas, fresh or frozen
  • 1/3 cup green beans chopped into 2 cm slices
  • 1 carrot finely diced
  • 5 cups of cooked brown rice
  • (approx. 2 cups uncooked rice)
  • 2 TBS wheat-free tamari
  • 2 eggs, lightly beaten

METHOD:

  1. Heat oil in frying pan until sizzling
  2. Add bacon, shallots, peas, beans, and carrot and stir until lightly cooked.
  3. Add rice. Cook for about 5 minutes, stirring only once a minute
  4. Add tamari, and continue to stir for two minutes
  5. Move ingredients over to one side pour in egg and let cook for 30 seconds
  6. With fork, scramble and then combine through rest of rice
