Salmon, goats cheese and spring onion omelette
This is an easy and quick recipe packed full of protein to keep you full throughout the morning.
INGREDIENTS:
- 2 eggs
- Salmon dotted around on top of the omlette
- Oil for frying (extra virgin used)
- 1/3 spring onion, sliced and spread on top
- salt and pepper to taste
- 1 teaspoon goats cheese, sprinkled on top
METHOD:
- Combine egg and milk or water in a bowl. Whisk.
- Add salmon, cheese and sping onion.
- Heat oil in a frying pan.
- Add the mixture and cook one side of the omelette for a minute or until set.
- Flip the omelette and heat the other side until it is set.
- Fold in half and serve with salt and pepper.
