Single serve chocolate pudding

Mug cakes are all the rage at the moment, but most require a microwave (we’ve talked about the risks of using a microwave here). We avoid using microwaves as much as possible, so we’ve come up with a single serve cake that is steamed for roughly 20 minutes. Super quick to make, delicious and very moreish, so it’s fantastic that there is only one!

INGREDIENTS:

  • 3 heaped tablespoons spelt flour
  • 1/2 tb baking powder
  • 2 flat tb cacao
  • 1-2 t coconut sugar
  • 1 egg

METHOD:

  1. Mix ingredients, pour into hessian and wrap with string, leaving about a cm spare room on top.
  2. Boil water, then let bubble with cake inside for upwards of 17 minutes.
