Turkey and Pumpkin Rissoles

Makes 12
INGREDIENTS:
- 500g turkey mince
- 500g pumpkin- grated
- 2 cloves garlic-grated
- 2 cm x 2cm ginger – grated
- 1 bunch of chives – chopped
- pinch of salt and pepper
METHOD:
- Place all the ingredients into a large bowl
- Mix ingredients extremly well, using your hands.
- Make rissole shapes, put on a plate and set aside.
- Heat the oil in a large frying pan. turn heat to medium and place rissoles gently in the pan.
- Cook for 5 minutes either side, or until thoroughly cooked.
- Serve immediately with a fresh salad or stir fry vegies.
