Turkey and Pumpkin Rissoles

Makes 12

INGREDIENTS:

  • 500g turkey mince
  • 500g pumpkin- grated
  • 2 cloves garlic-grated
  • 2 cm x 2cm ginger – grated
  • 1 bunch of chives – chopped
  • pinch of salt and pepper

METHOD:

  1. Place all the ingredients into a large bowl
  2. Mix ingredients extremly well, using your hands.
  3. Make rissole shapes, put on a plate and set aside.
  4. Heat the oil in a large frying pan. turn heat to medium and place rissoles gently in the pan.
  5. Cook for 5 minutes either side, or until thoroughly cooked.
  6. Serve immediately with a fresh salad or stir fry vegies.
