Vegetable fritter salad with Chicken Satay

INGREDIENTS:

  • 2 eggs
  • 1 teaspoon of sesame oil
  • 1/2 spring onion
  • Salt and pepper to taste
  • Chilli flakes to taste
  • 1 zucchini, grated
  • Chunk of cauliflower, grated
  • Chunk of broccoli, grated

METHOD:

  1. Mix eggs, oil, salt and pepper in bowl.
  2. Grate vegetables and add rest of ingredients.
  3. Mix well, then barbeque in pancake shape.
  4. Tear chicken tenders into strips and barbeque until practically cooked through.
  5. Add 3 tablespoons of satay sauce and finish cooking.
  6. Serve a palm sized amount of chicken on top of fritter with rocket and white cucumber chunks. Add extra satay sauce and enjoy!
