Vegetable fritter salad with Chicken Satay
INGREDIENTS:
- 2 eggs
- 1 teaspoon of sesame oil
- 1/2 spring onion
- Salt and pepper to taste
- Chilli flakes to taste
- 1 zucchini, grated
- Chunk of cauliflower, grated
- Chunk of broccoli, grated
METHOD:
- Mix eggs, oil, salt and pepper in bowl.
- Grate vegetables and add rest of ingredients.
- Mix well, then barbeque in pancake shape.
- Tear chicken tenders into strips and barbeque until practically cooked through.
- Add 3 tablespoons of satay sauce and finish cooking.
- Serve a palm sized amount of chicken on top of fritter with rocket and white cucumber chunks. Add extra satay sauce and enjoy!
