Zucchini Hummus
INGREDIENTS:
- 2 medium zucchinis chopped
- ½ c sunflower seeds soaked for 4 hours
- 1 lemon juiced
- 1 clove garlic
- 2 T tahini
- ½ t cumin
- ½ t sweet paprika
- ½ t salt
METHOD:
Place all ingredients into the blender, add a small amount of water (2 T) and blend until smooth, adding more water as necessary. Taste adding more lemon or salt if needed.
