Summer is well and truely in the air so it’s the perfect time of year for prawns!

We do enjoy prawns on occasion, and if you are a prawn person, a salad is definitely a great alternative to a sandwhich.

INGREDIENTS:

For the salad…

  • 1 handful of prawns; per person
  • Palm size amount of salmon/ trout
  • 2 handfuls of rocket and baby spinach; per person
  • 1 tablespoon of pesto per person (handmade variety if you’re seeking df or otherwise)
  • 1 teaspoon of goats fetta crumbled; per person
  • 4-6 cherry tomatos; per person

METHOD:

Combine, serve and enjoy!
