Honey Mustard Vegetables
INGREDIENTS:
- 3 large onions, quartered
- 6 medium carrots, chopped
- 2 medium sweet potato, sliced
- 1/3 cup cold pressed olive oil
- 60g pure butter, melted
- 1/3 cup pure honey
- 1 tbsp wholegrain mustard
- 1 tbsp sesame seeds, toasted
METHOD:
- Preheat the oven to 180oC/160oC for fan forced oven.
- Combine all of the vegetables in a large baking dish and drizzle with half of the oil.
- Bake uncovered for approximately 1 hour or until the vegetables are just tender.
- Combine the butter, remaining oil, honey and mustard in a bowl or jug. Pour this mixture over the vegetables and bake them for a further 20 minutes or until the vegetables are soft and the glaze is slightly thickened.
- Sprinkle with sesame seeds and serve.
