Ginger and Coconut Slice

Ingredients

  • 1 cup of pepitas
  • 1 cup coconut sugar
  • 1 ½ cups desiccated coconut
  • 1 Tbsp coconut flour
  • 2 Tbsp Ginger powder
  • 1 Tbsp cinnamon
  • 1 tsp Bicarb
  • A good pinch of salt
  • 4 eggs
  • ½ cup of oil
  • ½ cup water
  • Topping – I used a mixture of seeds including sunflower seeds, pepitas, poppy & sesame – you can leave them off.

 

Method

  1. Preheat over 175 degrees c
  2. Line a lamington/large slice tin with non-stick baking paper
  3. Place all dry ingredients into your food processor and grind down until ingredients are finely chopped
  4. Pour into a mixing bowl
  5. Add eggs, oil and water
  6. Combine well
  7. Pour mixture into lined baking mould
  8. Cook for 25 minutes
  9. Slice is cooked when it bounces back when lightly pressed
