Beef & Lamb Meatballs with Coconut

These are really quick to make, taste terrific and go well piled onto a fresh salad or a dish of grain free tabouli.  Served with a blob of yoghurt.  Yummo!

INGREDIENTS:

  • 150g minced beef (use chicken if doing the Healthy Habits Challenge)
  • 150g minced lamb (use turkey if doing the Healthy Habits Challenge)
  • 3/4 cups desiccated fine organic coconut
  • 1 teaspoon ground coriander
  • 2 cloves garlic (finely chopped)
  • 1 teaspoon ground ginger
  • 2 stalks fresh coriander (full stalks including roots, finely chopped)
  • 2 medium eggs
  • 1/2 lemon (juiced)
  • 1 teaspoon black pepper (ground)
  • olive oil (enough to cook the meatballs in)

METHOD:

  1. Mix all the ingredients (except the olive oil) by hand
  2. Shape into small meatballs
  3. Heat the oil to medium hot in a saucepan deep enough to fry the meatballs in small batches
  4. Fry the balls (a few at a time) until golden brown
  5. Drain on paper towel
  6. Serve as a side to a really great green salad or as a snack at one of your parties
