Blueberry Pancakes

INGREDIENTS:

  • 2 eggs
  • 1 tbsp collagen powder
  • 1 tbsp coconut flour
  • 1 dsp coconut yoghurt
  • Blueberries

METHOD:

  1. Whisk together all the ingredients except the blueberries.  The mix should be quite thick, if not add some more coconut flour.
  2. Heat some butter in a frypan and place spoonfuls of the mixture and top with blueberries.
  3. Cook and then flip over and cook the other side.
  4. Top with more blueberries and coconut yoghurt
