Whiting and Green Vegetables

INGREDIENTS:

  • 3 pieces of whiting per person
  • 1 medium clove of garlic
  • 1 tablespoon of high quality butter (omit if dairy free)
  • 2 tablespoons of extra virgin olive oil
  • pinch of salt to taste
  • 2-3 broccolini per person, chopped into chunks
  • 1 generous handful of spinach

METHOD:

  1. Pan fry garlic with oil and butter.
  2. Add broccolini to pan and fry for 1 minute.
  3. Add whiting to pan until cooked.
  4. Once Whiting is cooked add spinach to the pan until it is slightly wilted.
  5. Serve and enjoy.
