Chicken and Cabbage Stir-fry

Serves 2

Ingredients:

  • 200g chicken breast, cut into thin strips
  • 400g finely shredded cabbage
  • 2 cloves of fresh garlic, sliced or crushed
  • 2-3cm fresh ginger, grated
  • ¼ cup tamari
  • ½ cup water
  • Optional: Chilli to taste, finely chopped

 

Method:

  1. Combine tamari, garlic and ginger
  2. In a frypan, cook chicken in ½ of the tamari mixture until chicken is cooked through
  3. Remove from pan and set aside
  4. Using the same pan, add a little water to remove any chicken flavour stuck to the bottom.  To the water, add the cabbage and remaining tamari mixture. Add optional chili if using.
  5. Stir-fry the cabbage mixture until cabbage is cooked (but still a little crunchy). Add cooked chicken pieces and toss until combined.
  6. Top with fresh herbs and fresh lemon juice
