Easy Chicken and Mushroom

Ingredients

  • 1 tablespoon coconut oil (good quality)
  • 2 cloves garlic
  • 1/2 a brown onion
  • 2 chicken thighs, cut into 1 cm strips
  • 4 medium brown mushrooms
  • Salt (a good pinch)
  • Just a dash of water

Method:

  1. On medium heat, cook onion, garlic & salt in coconut oil for 5-10 minutes. Be careful not to burn the garlic.
  2. Chop mushroom into slices and add to pan. Continue cooking until mushrooms have almost cooked, another 5-10 minutes taking the lid on and off.
  3. Add chicken strips and water and cook with lid on until chicken is cooked, another 5 minutes.

Served here with mango salad
