Salmon Stir Fry

Serves 4

Ingredients

  • 3 cm fresh ginger
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 1 zucchini
  • 1 small head of broccoli
  • 2 short celery stalks
  • 4 mini red capsicums
  • 1 generous handful green beans
  • 1 generous handful of snow peas
  • 4 medium/large brown mushrooms
  • 1/2 red onion
  • 2 tablespoon sesame seeds
  • 1 tablespoon chilli flakes (optional)
  • 1 generous handful coriander
  • 2 portions of salmon cut into chunks as pictured

Method

  1. Cook all ingredients in wok until tender
  2. Cook salmon on a medium heat until cooked through
  3. Serve with greens of choice- pea tendrils from Harris Farm pictured
